Recipe: Pumpkin Fluff Pie with Oatmeal Crust

I have 2 back to back parties at work - one Friday and another Monday - that I have to take a dessert for.  I adapted this pumpkin fluff recipe a bit and used my new favorite oatmeal cookie pie crust recipe...  From licking the spoon and the bowl (yes, I counted it), it's a really yummy one!  I'll be making it for Thanksgiving, too, i think!

Literally took me about 15 minutes, including cleanup!

Now I have to come up with a good birthday cake for Monday... hmmm...  and the woman that one's for is a bit of a foodie and always cooks the cakes for the rest of the staff... pressure's on!

What about a SF Red Velvet cake....that's what I made my husband for his birthday....it was better than the regular suger filled recipe
