Recipe: Crock Pot Roast

Made this SUPER-EAST crock pot pot roast on Sunday.  It's even better left over!

Top round roast
light- to medium-color beer  (I used "Incubus")
Beef stock (low sodium, low fat)
Garlic (fresh, sliced thin)
3 packages (for a 4.5 pound roast) Good Seasons Dry Salad Dressing mix - cheese and garlic

Veggies of your choice... I used:
Red potatoes
Celery
Onion, chopped

Directions:
Spray the crock pot lightly with Pam or cooking spray.  Sprinkle one packet of the dressing in the bottom. 

Add the roast, sprinkle with one more packet of the dressing.

Pour in the beer (for a 3 - 5 pound roast, I'd use 2 cans or one large bottle), trying not to disturb the spices on top of the roast.

Add about a cup of beef broth

Place the veggies around the roast and some on top of it.  Sprinkle with the remaining packet of dry dressing.

Cook for 4 - 6 hours on high (depending on the size of the roast).

The liquid makes an awesome and very low fat gravy if you want gravy, too!

Let me suggest using the crock pot liners (similar to a roasting bag). They are TERRIFIC and cleanup is SO easy!
