Well we had a great meeting today here in Western PA. We had a small turn-out today, but it's ok. We still had fun!
Here are some pictures and recipes from todays meeting

Sugar-Free Pumpkin Cheesecake

 

 

 


Crust:

1 1/2 cups sugar free pecan-shortbread cookies

5 Tbsp. light butter, melted

1 Tbsp. splenda

Filling:

3- 8oz.pkgs. light cream cheese, softened

1 cup splenda

1 tsp. vanilla

1 cup canned pumpkin

3 eggs

1/2 tsp. cinnamon

1/4 tsp. nutmeg

1/4 tsp. allspice

 

 

Cool Whip
Mix crust ingredients together, just till coated and crumbly. Press onto the bottom and 2/3 up the sides of an 8" springform pan. Bake for 5 min. at 350. Set
aside.

 

Combine cheese, splenda and vanilla in large bowl, mix until smooth with an electric mixer. add pumpkin eggs, and spices, beat till smooth and creamy. Pour into the crust. Bake for 60-70 min. or till the top turns a bit darker. Remove from oven and allow to come to room temperature, then refrigerate. After it has thoroughly chilled, remove the pan sides and cut. Serve with cool whip.

Chicken Rollatini



3 Chicken breasts
3 wedges of Laughing Cow Garlic and Herb cheese
3 Slices of swiss cheese
1-10oz package of frozen spinach, squeezed DRY
1tbsp extra virgin olive oil
1 small onion, diced
3 cloves of garlic, minced
1 tsp tarragon,
1/4tsp salt
1/4tsp pepper
1/3c dry white wine
4oz can of sliced mushrooms
1/2c bread crumbs

Preheat oven to 375*F. Pound out chicken breasts until thin. On each chicken breast spread 1 laughing cow wedge and top with 1 slice of swiss cheese. In a medium skillet, saute onions and garlic in the olive oil until tender. Add salt, pepper, tarragon, spinach and white wine. Coo****il liquid dissapears. Top each chicken breast with 1/3 of the mixture.  Roll each chicken breast and secure with toothpicks. Roll in bread crumbs and place in a greased casserole dish. Bake 45-50 minutes or until chicken reaches 180*F.

Shelly's (Eggfaces) Mexican Bites (Beef and Bean)

2 Cups taco seasoned ground Beef (93% lean)
1/2cup black beans
5 eggs
1/2tsp salt
1/2c cheddar cheese

Combine ingredients and fill 24 mini-muffin tins. Bake at 350*F for 25-30 minutes.
Sorry there is no picture...we ate them....haha!!

All in all we had a great time and we're looking forward to seeing some new faces next time!

That cheesecake recipe is perfect timing as was trying to think about what to bring to a friend's for the holidays. It looks awesome! Can't wait to try it out.

Wow wow wow!  FABULOUS!!!!!  Thanks so much!

Who stuffed the chicken breast?  Can they come to my house and do it for me?  No matter how hard I try - my stuffed chicken breasts NEVER look that professional!  They taste great - but don't look like a show piece like that!
