Please excuse my cousin, Mr. Stauffer Star

Hi,

My name is Ms. WLS cookie star.

I am the relatively new cousin of someone many of you know, Mr. Stauffer Star.  I have come to understand that a few days ago, my evil sugar laden cousin made his way into the hands of one of your friends, and at the same time, made his previous memories of himself surface for many of you.

HOWEVER I want you to know that my whole family are not bad people!  I myself am a home made graham cracker star made with whole wheat and rye flour, splenda, cinnamon and so many other wonderful flavors!  I must admit, I do contain some honey and molasses (a girl has got to get her sweetness from somewhere!) but there is not enough to cause any harm

I am robed in the finest Hershey sugar free milk chocolate.  I haven't had the time to get my whole holiday outfit togethe, so I hope you understand my lack of accessories as of yet!  Here's a picture of me, and better yet, instructions to make me yourself!

Ms. WLS cookie star



1/2 cup all purpose flour
1 1/4 cups whole wheat flour
1/2 cup rye flour
1/2 cup splena granular
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 cup (1 stick) cold butter, cut into pea size bits
2 tablespoons honey
2 tablespoons molasses
1/4 cup cold water
1 teaspooon vanilla extract

In a food processor or electric mixer, mix together all ingredients up to butter (DO NOT put in butter)  Once combined, put in butter (already cut up) and pulse until it looks like coarse meal.  Add the rest of the ingredients and mix until the dough comes together in a ball, about 1-2 minutes.

Divide dough in half, roll each half into a ball and flatten into a disc.  Between two sheets of parchment paper, roll each disk to be 1/2 an inch thick.  Place in FRIDGE for about an hour, until dough is set.

Preheat oven to 350

Take out rolled dough and continue rolling until approximately 1/8 of an inch thick.  Cut out desired shape with cookie cutters.  Reroll scraps (may need to place in fridge to firm up again) to get more cookies. 

Place on parchment lined cookie sheet.  ***** each cookie multiple times with a fork, and bake 12-15 minutes, until golden brown on edges.

While cookies are cooling, melt one bag of hersheys sf chocolate chips in a double boiler with 2 teaspoons light flavored oil (like canola.  This gives the chocolate a nice sheen and also makes it a bit thinner for dipping)

Dip each cookie into milk chocolate, place on wire rack.  Allow to harden at room temp or in the fridge.

I entered the recipie info into spark people WITHOUT THE CHOCOLATE COATING  I calculated 24 cookies, one cookie being a serving.

Pam I was so happy when I opened my test message to see that pic! So awesome. I don't know if I am talented or patient enough to make them, but just knowing there IS a way, makes me feel better!

Jo,

It's really an easy recipie - and while the dough is chilling you can clean up (or put your feet up and have Johnny clean up.  I would choose the latter) or just make the dough ahead of time and then bake the next day or whatever

I must admit - they were YUMMY!!  And it's probably gonna be added to MY christmas baking list as well!

Even gave one to the girl I was babysitting tonight - and she seemed to definately enjoy it as evidenced by the chocolate dripping down her chin!

Jeez Pam!  If I send you my address can you mail them to me?  I love to bake, don't get me wrong, I just have no desire to do it this year!  The Ms. WLS cookie star looks scrumptious!
