Halloween lunchuon
Here's an easy recipe:
Preheat oven to 350
2 lbs. ricotta cheese (skim of course)
1 lbs. Mozzeralla cheese (skim) (shredded) or a combination of shredded cheese
6 eggs or eggbeaters (follow instructions on label as to the equivalent)
Seasoning to taste (I like to use the garlic/pepper grinder)
Mix well all the ingredients and then put them in a non-stick 9 x 13 pan that you spray with some cooking spray.
Preheat oven to 350 and bake for approximately 45 minutes, then take it out of the oven and let set. Cut in squares and it can be served warm of cold and you get your protein and they get a dish they have no idea is pretty good for 'em.
This is a dish you can add things like ham, pepperoni, sausage or the like to, but that is something you need to consider the people you are cooking for to decide whether it is appropriate.
