Good evening all.
As usual I need your help....lol
We are having a halloween lunch at work on Oct 30th. By that time I will just be starting phase 3 foods...I need to take a dish....So far everyone has listed what they are bringing and of course there is nothing for me to eat...I am looking for a recipie maybe for stage 2 foods that I will be able to eat but everyone else will also enjoy and not know it is weight loss friendly...I was thinking of a mexican dip of some sort...Any ideas....I will be on my 2nd day of stage 3 foods so I might even concider something more chewable...lol...Any help will be appreciated. Oh and if itll cook in a crock pot that would be the best..
Thanks so much
Paula

I'm not sure what your phases mean. But why not something like a crock pot of chili? Meatballs with gravy (think sweedish meatballs), meatballs and tomato sauce.

Just a few ideas!!

How about a bean dip recipe.  I like to take no  fat refried beans spread them over a plate, top with a good layer of plain greek yogurt, a little shredded cheese and salsa.  The greek yogurt looks and tastes a lot like sour cream, 20 gms protein per 8 oz serving, the beans are high in protein, cheese is good protein, I took a jar of my favorite salsa and ran it through the blender to make the whole thing pureed.  Works great with a spoon for us after surgery, bring some chips to dip for the co-workers who will be none the wiser.  Nummmy, I have this a couple times a week, just because I like it.  I am 6 weeks out from my RNY.  This could be adapted for any serving platter.

Good luck with the luncheon.  I find my greek yogurt at the local health food store, otherwise also find it as Cub, in the organic refrig section and at some walmarts.  Another use for the greek yogurt is to puree soft fruit and add to the yogurt for flavoring.  There are others here on OH who have recipes for greek yogurt, I am still playing with ideas.  Tried to make a tarter type sauce of it for fish the other day, kind of a flop on the first attempt.   But I am not yet done with trying.

I make something similar, I call it 5 flavor Dip.

8 oz. fat free cream cheese

1/2 Jar Pace Picante (Jalepeno and Onion)

8 oz. Greek Yogurt

1 Can Refried Beans

1 Envelope of Fajita Seasoning

1 Cup Sargento Reduced Fat 4 Blend Mexican Cheese

I bake in the oven for about 25 minutes at 400, take out and stir well to incorporate everything and put it back in the oven at 350 for another 15 minutes

I pair it up with Aldi (Casa Mamita) Taco Flavored Chicken Breast

Tastes like a Burrito without the wrap.

Some days your the dog and some days your the hydrant.

Make deviled eggs and then you can eat them too. To give them a Halloween edge you use black olives and cut them into pieces to make spiders on top of them. You can just pull the olives off yours if you want and that should be alot less work than hauling around a crock pot.

you could also make a crustless quiche - that can be eaten room temp or hot
