The "bites" you don't really need a "recipie" for per say....I take about 8-10 eggs, mix with milk (like scrambled egg stuff) saute some veggies (onion and mushroom, or add some meat like turkey bacon, low fat sausage, ham, or any combination there of)  Sautee your "add ins" and let cool slightly.  Combine with egg mixture, pour into muffin tins and bake at 350 until almost set. (unless you are eating/serving them immediately, then let them coo****il completely done)  You can also add some shredded cheese.  Pack in your lunch bag, and then pop in the microwave for 45 seconds or so until it's warm and done.  They are yummy!

I make up a bunch of containers of the greek yogurt, put some frozen berries on top and some splenda.  Then, I just throw them in my lunch bag.  The frozen berries, as they defrost, the juice comes out of them, making a berry flavored yogurt w/ whole berries. When I'm ready to eat, I just mix it up and enjoy!

I very often do string cheese as a breakfast as well, or my ricotta mixture with splenda and cinnamon

Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.

btw- you can cook bacon and eggs in the nuker... Jeremy does it all the time at work... Jeremy said with the egg- less than a min... not on high... he keeps a little nuke able bowl at work and some PAM or a little butter to put in the bowl... stirs up the egg and then nukes... bacon... 2 to 3 mins... we just do it on paper towels... but if at work.. use a plate and paper towels...

WHen I do breakfast at work... I get the bob evans/jimmy deans turkey breakfast sausages that are precooked... nuke them and eat a 100 calorie mini bagel for breakfast...

btw-I emailed my friend for the recipe... just haven't heard back from her on it yet...

Shannon,

Thanks! I hadn't thought of cooking eggs at work, but there's no reason it wouldn't work.  Great idea!
