Creamed Spinach Recipe
I just picked up a copy of Weigh****chers Complete Cookbook and came across this recipe, the nutritional value is baed on 4 servings. My calculation of the nutritional value is slightly off, so I guess what brands you use could change it a bit.
2/3 cup low fat 1% cottage cheese
1/4 cup 1% milk
1 Tbsp. Grated Parmesan Cheese
1/2 clove minced garlic
1/4 tsp. salt
1/8 tsp. pepper
2 (10 oz.) bags triple washed spinach, steamed until tender and chopped
In a food processor or blender, combine the cottage cheese, milk, parmesan, garlic, salt and pepper; puree. Add one-forth of the spinach; puree until smooth.
In a large nonstick skillet, combine the remaining spinach with the cottage cheese mixture. Cook, stirring occasionally, until heated through, about 5 minutes.
