SOOO good! Acai Energy Pie
So I've been really loving Acai Energy Boost powder drink (add to a bottle of water). It's really tasty, sweetened with stevia crystals, and loaded with nutritional goodness (loads of vitamins and antioxidants and such). I get it by the box at Costco, but it's available elsewhere. I digress. My frustration with not being able to make the Creamsicle Pie recipe that's been floating around has been my allery to aspartame, and my inability to find a flavored gelatin that is NOT made with aspartame. I finally bought UNflavored gelatin and then was looking for unsweetened Kool Aid to flavor it with. Then, DUH, thought I'd try the Acai to flavor it (I'm also going to try the Tea2Go Red Tea with Peach for this...)... OMG - YUMMMMMM!!!!!
Here's the recipe - used Acai for the gelatin and peach activia yogurt and it's AWESOME.
