recipe - spinach ricotta meatloaf
Made this last night and cooked it this afternoon... REALLY tasty. You could further decrease the fat by going with all 90% (or 95%) lean beef or going with all turkey. I think the taste would still be really good.

Prep was very easy (less than 10 mins - the majority of which was chopping the onions). Cooking time was underestimated at first - it ended up taking about 2-1/2 hours, but I made a really DEEP one (2 layers of ricotta, 3 thick layers of meat). You could dramatically cut cooking time by making it in a larger dish, not as thick.
I also drained off the juices afterward and made them into a gravy for hubby/daughter by heating them in a saucepan with some flour, stirring constantly until thickened then adding water and stirring until desired consistency.

I have to say - the whole family liked this recipe, so it's a "keeper" for me.
I really like using Sparkpeople to calculate the nutrition values in my recipes. It keeps me on track and sometimes when I'm inputting things I can think of ways to adjust the recipe a bit more to make it "friendlier"... subbing part almond flour, or using egg beaters instead of eggs, whatever.
And the recipe search can yield some very nice ideas, too!
