recipe for ground turkey
I have some ground turkey out and am looking for something to do with it. I have done the chili thing. I was thinking of meatloaf, but was hoping someone would give me something yummy. There is about a pound of it.
Anything new and exciting and of course Siehara friendly? She is not too picky, so that shouldn't be hard.

How about stuffed peppers?? You can do them in the crock pot all day and they would be super yummy. Or you can bake them too if you are looking to use your turkey tonight.
A lot of stuffed pepper recipes call for rice as part of the mixture. You could replace with chopped veggies. I googled this recipe and it looks really good and WLD friendly for the most part.

- 4 green bell peppers, tops removed, seeded
- 1 pound ground turkey
- 2 tablespoons olive oil
- 1/2 onion, chopped
- 1 cup sliced mushrooms
- 1 zucchini, chopped
- 1/2 red bell pepper, chopped
- 1/2 yellow bell pepper, chopped
- 1 cup fresh spinach
- 1 (14.5 ounce) can diced tomatoes, drained
- 1 tablespoon tomato paste
- Italian seasoning to taste
- garlic powder to taste
- salt and pepper to taste
- Preheat oven to 350 degrees F (175 degrees C).
- Wrap the green bell peppers in aluminum foil, and place in a baking dish. Bake 15 minutes in the preheated oven. Remove from heat.
- In a skillet over medium heat, cook the turkey until evenly brown. Set aside. Heat oil in the skillet, and cook onion, mushrooms, zucchini, red bell pepper, yellow bell pepper, and spinach until tender. Return turkey to the skillet. Mix in the tomatoes and tomato paste, and season with Italian seasoning, garlic powder, salt, and pepper. Stuff the green peppers with the skillet mixture.
- Return peppers to the oven, and continue cooking 15 minutes.

Lisa- I make a stuffed "meatmuffin", I just make a meatloaf mix with ground turkey and add spinach ,I usually mix in some greek yogurt to help keep them moist since the turkey tends to dry out.. Form a ball around part of a cheese stick, I have made these in mini and regular mufffin size tins, then you can use either as meatballs with sauce or just serve them alone also very good with feta cheese instead of the cheeese stick. You can make a tzatziki sauce to go with them which is also great for something different.
Stuffed cabbage would be really yummy and is crock-pot friendly (I can find you the recipe tonight when i get home if you want).
Spaghetti and Meatballs - Make the meatballs out of the turkey and the spaghetti as spaghetti squash. Use your favorite red sauce and serve it just like the pasta dish
Zucchini "canoes" - hollow out some zucchini. Brown the turkey in a non-stick pan. Add the chopped zucchini insides you scooped out and sautee with some onions, mushrooms, and whatever other chopped veggies you like until just cooked. Take off the heat and stir in some low-fat parmesan cheese, a little low-fat bacon or bacos, and a bit of egg beaters. Stuff it all back into the zucchini shells, top with a little more of the cheese and bake (350****il done all the way through (usually 30 - 45 mins). REALLY yummy and fun to eat!
