Pulled Pork Tacos
Ok, Liz gave me this basic recipe for pork roast to make pulled pork tacos... which btw is OMG GOOD!
2 Boston Butt Pork roasts
2 sweet onions chopped up
Apple juice
salt, pepper, garlic powder
Rub down the butts (hehehe) with salt, pepper, and garlic powder. Turn on the crock pot and put in the chopped onions. Place the butts on top of the onions. Then pour around the meat (dont wash off the rub). I used about 1.5 cups of it. Cook for 8 to 10 hours. Then shread it.
For the tacos... toss some of the meat with the leftover onions and apple juice and taco seasoning while warm serve in taco shells if you like. I served ours with some mexi rice and roasted corn. Last night it was black beans, cheese, and corn. super easy and awesome because then you can use the leftovers as BBQ sandwiches, etc...
