recipe: crock pot roast

Well, this was a winner and the whole family loved it!

Pot Roast (crock pot)

3lb chuck roast
1.5 lb white cream potatoes (the little ones)
1 can diced tomatoes with onions and garlic
1 can beef broth
1 vidalia onion, chopped
2 pkgs sliced mushrooms (i used one each of button and baby bella)
4 carrots, peeled and left in big chunks
2 parsnips (if you like them), peeled and in chunks
2 stalks celery chopped
4 tbsp chopped garlic
1 pkg dry onion soup mix
2 tbsp herbes de provence  (or any herb mixture you like)

Sear the meat on both sides and place in crock pot.  Top with potatoes.
Add the rest of the ingredients and cook on LOW for 7 - 8 hours.
Slice and serve.

NOTE:  You can use any mix of root veggies you like, as well as any blend of spices (like italian blend or pot herbs), and the next time I'll use 2 cans of diced tomatoes for more tomato flavor.

Thanks for sharing Karen! That sounds super yummy! I really need to get a bigger crock pot - mine would laugh at a 3 pound roast and veggies! lol
