country chicken recipe
made this last night and it turned out YUMMY!!!
Country Chicken Skillet
4 chicken breasts
1 package Knorr Vegetable soup mix
1 package Knorr French onion soup mix
2 cups water
1/2 tsp dill
1 cup greek yogurt
1. In non-stick pan, brown chicken breasts on both sides (about 5 mins)
2. Add water, dill, and soup mixes. Cover and simmer for about 10 minutes or until chicken is fully cooked but moist.
3. Remove chicken breasts to platter. Remove pan from heat.
4. In pan with water/soup mixture, stir in greek yogurt until thoroughly mixed. Pour over chicken breasts.
I served this with sauteed squash, steamed broccoli, and steamed cauliflower. Some in the family had pasta with it and liked it.
Next time, I might also consider adding sliced mushrooms to the pan while sauteeing the chicken - I think that would be really tasty in the sauce.
WARNING - the soup mixes can be high in sodium, so if you're sensitive to that, look for the low-sodium versions, or make your own with low-sodium veggie broth and chopped frozen veggies.
