Who makes it? Or am I crazy?

Ok...so am I remembering this correctly?  Does someone make a hummus or a guacamole type dip made w/ edamame?  Or is this something I'm dreaming up??

We have a family party to go to on Saturday.  I asked if they needed me to bring anything for the party and they said that no, I didn't HAVE to bring anything but if I felt like making something or wanted to add something, that would be fine.  They are having chips and dips and stuff like that in the beginning.

Sooooo....I was thinking of bringing a healthy dip with some veggies to dip into it and what not.  (I am also, PS, bringing my own box of skinny cow NSA ice cream sandwiches for my dessert when they have the TWO cakes and FOUR different flavors of ice cream on the menu)

So...does anyone do this?  If not, no big deal - I'll make up a different healthy dip or experiment with it on my own....just though I won't re invent the wheel if I don't have to!
Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.

You are crazy but we love you so I will share! lol I think that it was in the pile of recipes I gave you last time I saw you (the pie dropping off). Maryann had brought it to a cooking class a few months back - I'll e-mail it over when I get home tonight, unless someone else has it on their computer!

IT was SO yummy!! I think that it might have been an Alton Brown recipe off of food network.

THis is a different one - her's had a ton of garlic in it YUMMY!

Ingredients

  • 1/2 pound frozen shelled edamame (green soy beans), about 1 1/2 cups
  • 1/4 cup tahini
  • 1/4 cup water
  • 1/2 teaspoon freshly grated lemon zest
  • 1 lemon (about 3 tablespoons), juiced
  • 1 clove garlic, smashed
  • 3/4 teaspooon kosher salt
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon chopped fresh flat-leaf parsley
  • Suggested serving: Sliced cucumbers, celery, and olives

Directions

Boil the beans in salted water for 4 to 5 minutes, or microwave, covered, for 2 to 3 minutes.

In a food processor, puree the edamame, tahini, water, lemon zest and juice, garlic, salt, cumin, and coriander until smooth. With the motor running, slowly drizzle in 2 tablespoons of the olive oil and mix until absorbed.

Transfer to a small bowl, stir in the parsley and drizzle with remaining oil. Serve with the suggested vegetables, or refrigerate, covered, up to 1 day.

And if you don't want to make it from scratch, I've found it at Trader Joe's and now at Wegman's (warrington - in the hummus self-serve bar).  Both are really good!

And if you go to Wegman's and haven't seen them yet, try the Cocopops (at the back end of the vitamin aisle last time i was there).  They make them fresh - they're puffed cakes made from whole wheat, rice, and sea salt - 16 calories each, 4g carbs, and that's it (everything else 0s on the nutrition label).  They have a wonderful crunchy texture adn would be great cut up with the hummus with the veggies.  I had one last night with a little bit of peanut butter and it was awesome - but i also just eat them plain.

trader joe's sells edamame hummus dip...it's in my fridge now...soooooo tasty  : )
