Grilled Chinese Chicken Salad

Lettuce tossed with mandarin oranges, green onion, pea pods, water chestnuts, chow mein noodles then topped with grilled chicken

Ingredients
  •   PAM® Grilling Spray
  • 2 large boneless skinless chicken breasts (2 large breast = about 1 lb)
  • 1/4 cup La Choy® Soy Sauce
  • 1 cup low fat sesame-ginger dressing
  • 1 cup fresh snow peas, cut in half
  • 1/2 cup chopped green onions
  • 1/2 cup La Choy® Sliced Water Chestnuts, drained
  • 4 cups chopped iceberg lettuce
  • 4 cups chopped romaine lettuce
  • 1 can (11 oz each) mandarin oranges, drained
  • 1 cup La Choy® Chow Mein Noodles
  • 1/2 cup sliced almonds, lightly toasted
Directions
  1. Spray grate of outdoor grill and grilling utensils with grilling spray. Preheat grill to medium heat according to manufacturer?s directions.
  2. Place chicken in medium bowl. Pour soy sauce over chicken and marinate for 30 minutes. Grill chicken until no longer pink; allow to cool, slice thinly.
  3. Pour dressing into medium bowl. Add grilled chicken, pea pods, green onions, and water chestnuts; toss lightly. Chill in refrigerator 15 minutes or until serving time.
  4. Toss lettuce, oranges, chow mein noodles and almonds together in serving bowl. Top with chicken mixture and serve with additional dressing, if desired.

 YUMMMMM! i wish my "tiny tummy" liked lettuce... how strange is it that of all things i miss salad.. ?

Most of us start craving salad early on.  As long as you get your protein in, you can have it.

yeh im 5months out an introducing fresh stuff slowly lettuce just doenst want to stay down one bite chewed forever and soon as i start to swallow i gag and up it comes.. i think its cuz i used to eat a ton of dressing and now i know better... even if ff sf etc..  im sure salad and i will become friends again .... all in time... im patient.. if i can do 6weeks liquids i can wait for a nice yummi salad.. and that ones first on my list.. hehe
