Cool Dessert Recipe
OK, I found this recipe on the Kraft Foods website and while theirs isn't sugar free I was able to make it completely sugar free and it is awesome. One word of warning - since it is all sugar free all that Splenda may cause some serious gas-a**!!! But it is definitely worth it...
Sugar Free Oreo & Fudge Ice Cream Cake
1/2 cup sf hot fudge ice cream topping, warmed
1 tub (8 oz) sf Cool Whip, thawed
1 small pkg sf chocolate instant pudding mix
8 sf Oreo cookies, crushed
12 sf vanilla ice cream sandwiches (Giant has their own brand which are very good)
Pour fudge topping into medium bowl. Whisk in 1 cup Cool Whip. Add dry pudding mix and stir for 2 minutes. Stir in crushed Oreos.
Arrange 4 ice cream sandwiches, side by side, on 24" long piece of foil; top with half the Cool Whip mixture. Repeat layers. Top with remaining sandwiches. (You'll have 3 layers of ice cream sandwiches and 2 layers of the Cool Whip mixture). Frost top and sides with remaining Cool Whip. Bring up foil sides; double fold top down and ends to loosely seal packet - Freeze for 4 hours before serving.
