SF Oatmel cookie recipe

sure do!

2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 cup butter softened (or margarine)
1 cup diabetisweet (or 1/2 diabetisweet / 1/2 splenda or just splenda)
1 cup brown diabetisweet (or another brown sugar substitute)
2 eggs
2 tsp vanilla
3 cups old fashioned oats
1 1/2 cups raisins (or chocolate chips!)

Combine dry ingredients, set aside.

Cream butter and sugars. Add eggs and vanilla. Stir in dry mixture, then oatmeal and finally raisins. Drop by tablespoons full onto a greased cookie sheet. Bake at 350 degrees for 11-13 minutes. Remove from oven, let cookies cool on baking sheet for about 2 minutes then transfer to a cooling rack.

Enjoy!

PS - This makes a TON of cookies - I like to form 1/2 of it into a log and wrap in wax paper then put in a ziplock  bag in the fridge - when they have set up slice into 1/2" slices - freeze and you can pop them right into the freezer whenever you want a cookie!

Hi Liz,

okay this is a silly question, isn't flour fattening?

white flour is a carb so there are "empty calories" in it. This is a treat though, and I don't believe in deprivation, that is what made us fail in so many fad diets before surgery. I wouldn't reccomend eating 12 cookies but 1 here and there as a treat I think is perfectly fine. I know for some people these things are their trigger and they won't even consider having them in the house, I do OK with them around. I might have 1 a day for a week then toss them because I get sick of them, that or hubby gets to them first! lol

lol sure thing! It's pathetic but I have my favorite cook book by my bed (family recipes) so when anyone asks I can post right away. By this time I usually sit on my bed with my laptop (cheaper to run the AC in one room then the whole house!)

Oh I find that splenda makes dryer flatter cookies - diabetisweet makes them just like "normal"
