Indonesian Pork Satay

Ingredients

  • 2 Tbls  peanut butter

  • 1/2 cup  onion, minced

  • 1 clove  garlic, minced

  • 2 Tbls  lemon juice

  • 2 Tbls  soy sauce

  • 1 Tbl  brown sugar

  • 1 dash  hot pepper sauce

  • 1 Tbl  vegetable oil

  • 1 lb  boneless pork loin, cut into ½ inch cubes

Directions

  1. Blend peanut butter, onion, garlic, lemon juice, soy sauce, brown sugar, hot pepper sauce and vegetable oil together in blender.
  2. Marinate pork in mixture for 10 minutes, or more.
  3. Thread pork on skewers (if using bamboo skewers, soak in water for 30 minutes to prevent burning).
  4. Grill or broil for 10-12 minutes, turning occasionally until done.

    Makes 8 servings. Per Serving: 2 Meat, 1 Fat, 1 Free.
