Sticking to the Basics - wednesday

Good morning ladies!

Here goes nothing...

B: this bulgar wheat concoction (bulgar wheat, eggs, soy milk, vanilla)
S: salami and cheese roll ups
S: peaches and fage
L: chicken and grilled veggies
S: cheddar cheese and a few whole grain crackers
D: leftover taco salad (if Chris doesn't take it for lunch if he does I'll scrounge)
S: peach pie


OK I Did ok except for dinner - Chris had taken the last of the "legal" leftovers for lunch/dinner. I wasn't feeling like I could eat an egg so I had 2 mini frozen pizzas (about the size of a 1/2 dollar) and some cucumber salad. For snack I'll be better then peach pie and have another greek yogurt or chocolate pudding made with soy milk and peanut butter. I did good all day, re-arranged my snacks some - but ate them all and nothing else. Oh and you'll see I have 2 snacks in the morning - I have breakfast a little after 6 and for some reason in the morning I need to eat every 2 hours or I feel light headed.... so that gets me to a 1pm lunch

Good Morning PA!!!

I'm trying out my tofu noodles today.  I'll report later how they were, I got the recipe I'm using for them off the package.

Okay, I just had the tofu noodles, and they aren't bad, just a weird texture, I think the fat free cream cheese made them taste off.  I'm going to order some more and try it with cottage cheese or marinara sauce.

Good Morning. I was REALLY craving an Egg McMuffin this morning! So I stopped and got the 2 for $3. And when I got to work, I threw out the english muffins and put the egg,cheese, and canadian bacon parts on an arnold sandwich thin. It hit the spot! Not exactly healthy but I adapted it enough to save me some calories and carbs! Now.....how do you "fake" those gross, greasy hasbrowns I love so much! LOL

L: picnic lunch at work....ugh. I will eat plain hot dog and some of my string cheese (no cake!)
S: nothing
D: cheese omelette

Celery Root is a good substitute for potatoes.  Boil one up and make baked mock potato pancakes.  (add onion, salt, pepper, paprika)

We use the recipe for the chicken meatballs but instead of making into balls we bake it with veggies mushroom and sometimes a lttle rice with whatever cheese you like on the top

Here's my plan:  update in red

B:  yogurt & fiber one  ate that
S:  grapes  skipped because I ate breakfast late and we were going to the movies
L:  Greek Chicken Salad  cut up pear, 2 cheese sticks and a banana during movie
S:  cut up apple & cheese stick (going to the movies - must practice strengthening my resistance muscle for greasy movie popcorn)  see above and proud to report no movie popcorn
D:  cheeseburger salad - no bun  Greek Chicken Salad

What's the chicken meatball recipe?

Buffalo Chicken Meatballs
1 lb ground chicken; all white meat

½ small onion, grated

2garlic cloves, grated

½ cup parsley, chopped

Salt and pepper

Extra virgin olive oil, for drizzling

2 tablespons butter

½ cup hot sauce, frank’s brand

Blue cheese dressing, for dipping

3 scallions, green and whit parts thinly sliced

Celery rib

Carrot sticks

 

Preheat oven to 400 F

In a large mixing bowl, combine the ground chicken with the onion, garlic, and parsley and season w/ salt and freshly ground pepper.  Shape into balls.

Arrange the meatballs on a nonstick sheet pan and drizzle them with olive oil.  Place in the oven and bake until the meatballs are cooked through and golden brown, about 10-12 minutes.

While the meatballs are baking, melt the butter in a large skillet over medium heat.  Add the hot sauce and whisk to combine.  Toss the baked meatballs in the ot sauce to coat (or serve on the side for those who don’t want the hot sauce).

Serve with a bowl of the blue cheese dressing garnished with scallions, celery, and carrot sticks alongside.
