love my lunch meat roll ups!! SOmetimes I used flavored cream cheese and onions too - also great wrapped in lettuce leaves!

Oh and I don't think that I listed my dinner - I ended up having 2 mini pizzas (about 1 1/2 " across - they are tiny) and some cucumber salad

mmm.... flavored cream cheese would be really good, too!  I put a scallion in the middle of each roll before i cut it and that gave it wonderful flavor.  I'm going to experiment with some other deli meats in coming weeks... turkey, corned beef, chicken... basically, whatever I can find in low-fat, low-sodium varieties.  It's a wonderful idea, Liz and the idea of the lettuce wraps makes it even more inviting for hot summer days!
