crock pot short ribs & crock pot recipe ideas - please add yours!

OK so someone had mentioned that they aren't much of a cook - your crock pot will be your best friend!

Here is one I am going to try, possibly tomorrow if I am still supposed to be resting... and I really want to make some room in my freezer! lol

Beef short ribs

I think I have 6 in a package
1 medium onion chopped
4 or 5 garlic cloves smashed (no need to chop) oh and more or less to your taste - we love garlic
2 cups beef stock (yes the kind from a box is fine! low sodium if they have it - so you can control the salt)
salt and pepper
a packet of that onion soup mix (omit salt if you do this)
1 small pack sliced mushrooms

Optional items - 1 rosemary spring, 2 thyme sprigs (or about 1/2 teaspoon dry), 1 cup dry red wine

Toss everything in the crock pot - set on low - about 8 hours - dinner's ready! If you are serving your family too (non- WLS people) you could serve with mashed taters, noodles or rice.

I'm kind of writing this as I go, kind of sounds like french onion soup, which I LOVE! lol I'll let you know how it turns out but it sounds good to me!

Tried and true recipes
chicken (I prefer thighs but you coud do breasts too -just don't cook as long) with some low sugar BBQ (or make your own - ketchup, brown sugar substitute, onion, garlic, salt and pepper) and about 1 cup all natural apple juice - cook for about 4-6 hours until chicken shreds with forks
You can do the same thing with pork - I prefer the shoulder or boston butt (you need some fat on it or it is dry and stringy)

A whole chicken cut up into pieces (or buy chicken pieces - again I prefer thighs - stay moister) with juice of 1 lemon, garlic cloves smashed and a bit of chicken broth (from the can/box is fine!) cook about 4-6 hours on low (8 or 9 is ok if you are at work)

chicken pieces (or beef cubes)a can of low fat cream of mushroom soup, some garlic powder, salt, pepper, some water or chicken stock - cook 6-9 hours on low. Stir in some sour cream or greek yogurt right before serving.

a beef roast, chopped carrots, celery, onion, garlic, a packet of onion soup mix, pepper, some beef stock or water - cook 6-9 hours on low. This is like pot roast!

beef cubes, a can of diced tomatoes, onion, garlic, salt, pepper, beef stock (or water), oregano - cook 6-9 hours

I have heard of others doing chili in the crock pot as well as white chicken chili (I'm sure recipes will be posted)

Leslie I believe it is does chicken thighs, diced tomatoes, garlic, onions, salt and pepper

Yes please, let us know how it turns out!  That sounds delish!

I simmer boneless, skinless chicken thighs with diced tomatoes and herbs, and I love it.  I make a batch every week.  I also simmer them with BBQ sauce -- an idea I got from Heather D.  I've made them on the stove and in the crockpot too.

OOOOHHH I made a whole crockpot full of bone-in chicken thighs with the diced tomatoes and I have a bunch of it in the freezer waiting for me! It was sooo good!

Glad you liked it.  It's my favorite recipe right now, and I'm trying not to have it too often so I don't get sick of it -- but I can eat it every day and I love it!

My favorite crock-pot recipe is rotisserie chicken.

1 whole chicken (clean out all the inside gunk)
4 or 5 aluminum foil ball
season salt or salt and pepper

Put the foil balls in the bottom of the crock-pot. Put cleaned and dried chicken on top of the foil balls, season with salt and pepper or season salt.  Put the lid on, turn on low heat for about 8 hours... depending on the size of your bird.  The meat literally falls off the bones.

Talk about easy!

I'm sure I got this recipe from plussizedbarbie who is on the LW forum.  Siehara even ate it and liked it!! I put it on soy crisps since I am really not eating any crackers or any full carbs yet.  Next time I will add more heat to it because it wasn't that spicy, so play with the spices based on what you like.

Crock Pot Turkey Chili

 

  • 1lb ground turkey (or beef)
  • 2 24oz cans Hunt's tomato sauce (or one 40oz jar of tomato sauce, the sauce amount is not an exact science just make sure there is enough to cover the meat and beans and make sure it is NOT one of those "meat flavored" or "cheese flavored" sauces, just plain tomato sauce please)
  • 1 can pink beans (drained)
  • 1 can kidney beans (drained--or you can use two kidney beans, I just like the pink and red combo)
  • 1/2 a box frozen corn (or one can drained)
  • 1 envelope McCormick chili seasoning
  • 1 Tablespoon chili powder
  • 1 Tablespoon garlic powder
  • 1 teaspoon cumin powder

OMG!!!!  I think you all were reading my mind - just bought the crock pot today and was going to post about giving me recipes!!!  This is totally exciting!  I am so going to print these out and give them to my hubby, (He is the one that does the cooking, I have the gift of eating....:))

That is soooo funny!!!! :)  My mother was the first one on the block to own a microwave - when my husband and I were dating, he was always amazed at how much food there was with no pots or pans to clean up after! :)

So admittedly I don't cook by recipies so these are just guesstimates....

"sweedish meatballs"
1 pound ground beef
1 pound ground pork
1/2 onion
1 egg
1/2 cup milk
Breadcrumbs
Beef Stock
Cornstarch mixed w/ water

combine meats
Blend onion, egg, milk in blender until smooth.
Mix into the meat mixture
Add a sprinkle of breadcrumbs
roll into meatballs, place in crockpot, cover w/ stock and cook 4-6  hours on medium
Before serving, mix in cornstarch slurry to thicken gravy

"Pulled Pork"
2 pork tenderloins or one 2-3 pound boneless pork roast
Beef stock
low sugar/sf barbque sauce
Smashed garlic
Pepper
Cumin
Salt

Combine liquids in crock pot, stir well, and stir in seasoning
Add pork
cook on high until meat is tender and cooked through
Remove from crock pot and shred w/ forks.  Add sauce

Chicken Stew
Small bag of mixed veggies (or carrots, peas, corn, onion, whatever combo you like)
1-2 Tablespoon of flour
4-6 chicken breasts
Chicken stock

Combine veggies and flour in crock pot. Stir to coat veggies.
Add in chicken, cover w/ stock
Simmer until cooked and slightly thickened.  Can also add cut up potatoes to make it even thicker.

That's about all I can think of at this exact moment, but I'm sure there's more....
