Cheddar Fondue (Taken from Rachael Ray)

Now...I know some will say that the first ingredient is not weight loss friendly, and I agree.  I'm assuming you could sub something like chicken or veggie stock but I haven't tried it yet so I can't say for sure.

What I can say is this was an AWESOME dinner...fun to eat...and beat the prices at the "melting pot" restaurant by gobs and gobs

1 cup lager beer
1 garlic clove, smashed
10 ounces shredded cheddar
5 ounces Grueyer cheese (I bought the blend of pre shredded swiss/grueyer on the dairy isle)
1 heaping tablespoon flour
spoonful of spicy mustard
few dashes of worcestershire sauce
few dashes of hot sauce

Combine cheeses and flour in a large bowl
Bring cup of beer to just about a full boil in a pot on the stove with smashed garlic clove
Reduce to simmer
Add cheese, one handful at a time.  Stir constantly, waiting until each handful melts until adding the next one.  It will appear to be thin at first but by the end thickens nicely
Stir in the mustard, hot sauce, and worcestershire sauce

Serve in a warm bowl, fondu pot, or large hollowed out crusty bread bowl
"Dipper" suggestions:

Green apples
Red or Black grapes
Carrots
Broccoli (steamed briefly)
Celery
Cauliflower
Mini hot dogs/turkey dogs previously cooked
Bread cubes (I did not have these, hubby did, though)
Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.

oh and they make non-alcoholic beer in the soda aisle of the grocery store - the taste without the alcohol.

When I make fondue I do it this way...

1TBSP of butter

1TBSP of flour

1 to 2 cups of chicken stock (reduce fat or 99% fat free)

2 cups of cheese (whatever you want to use or have on hand- we normally have mexi mix or pizza mix- naturally lower in fat)

2 good dashes of garlic powder

1 good dash of onion powder

3 dashes of worsestershire sauce (or as we call it worshie sauce)

a dash of hot sauce or red pepper flakes

I put the leftovers on steak, chicken, bread, eggs, etc... it has extra protein because of the stock... and much lower in fat because of using the cheese mixes I listed... but if you want a sharper taste use the same but then add in some extra sharp cheddar... so you get the tang without the calories...
