Sticking to the basics MONDAY edition

Good Morning!  Well as you can see - I'm killing some early morning time so thought I would start this post, as well.  I'll also post what I'm bringing to work tonight....

B:  Scrambled eggs w/ lf cheese in a pita like pocket
S:  Greek yogurt
L:  Something at the italian place - probably eggplant rollatini
S:  ??  Not real sure yet
Probably sometime after that will be nap time before work

Exercise:  Getting out on the rollerblades today!

Bringing to work (probably won't eat it all...but I pack a bunch of stuff so I can grab something whenever time allows)

Egg salad (I've been on this egg kick lately...don't ask me why...)
String Cheese
Greek yogurt
Homemade meatballs
Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.

B: Cheese Omelette
L: Left over steak
D: BBQ Chicken on grill

I have no snacks planned today, and brought nothing to work with me. YIKES! I am hoping to run to the store a little later and pick up some lunch meat to snack on so we will see........

When life hands you lemons, ask for tequila & salt and give me a call!

B: egg and cheese sandwich
S: pretzels and cheese
L: a small piece of a hoagie
S: fage and peaches
D: not sure - didn't take anything out although Pam's eggplant rollatini sounds mighty good...
S: fruit

Doesn't it though?  LOL  I'm gonna work on a grilled version here at home sometime in the next couple of weeks...hmmm...cooking class recipie?

I do make a grilled version! slice and grill the eggplant, roll with what I would use to fill lasagna - ricotta, egg, mozzarella, garlic, oregano, salt and pepper - put in a pyrex - add some sauce and more mozz and bake until heated through! YUMMY!! now I want that too -darn it!

Sounds exactly like what I was going to do with mine, actually!  If you want...deLorenzo's up college hill before the giant (coming from your house) has it (that's where I got mine from today)  It's not grilled...but soooooo good.  Brian and I go there once in awhile - AWESOME food but a little pricey.  You can call ahead and get it to go.....

I am working a double today so not sure of the sequence of food but I packed
tuna
salad with goat cheese feta
trail mix
protein shake
Deli meat and cheese
greek yogurt
chicken meatballs
Strawberries
these will be eaten over the next two days of doubles
i already had scrambled egg with cheese and onion and some coffee

L - Chicken salad made with greek yogurt and cucumbers
S - Liz's SF choc pudding
D - Bronzino (left over from last night's dinner - yum!)
S - ??

E - EA active workout, 30-day challenge (the last week); walking tonight

OK, I'm back at work and hopefully back on a much better eating schedule - all I can say is thank goodness for protein bars because at least I got something decent in over the weekend! Today is a fresh start so here goes...

B: Sausage & egg burrito
S: Lo-fat cottage cheese
L: Lite turkey & cheese on ww bakery round; sf pudding
S: Stringcheese
D: Beef tips & gravy; salad
S: Nuts

E: Curves; walk the dog; ride my bicycle (if its not raining)
