Parsley -Broiled Scallops

Ingredients

1 tbsp chopped fresh parsley 1 tsp grated fresh lemon rind 1-1/4 lbs sea scallops 1 lemon, cut into wedges1/4 cup bread crumbs1 tsp olive oil 1 tsp each salt and pepper, to taste

Preparation

Preheat an oven broiler to medium high.

Place the bread crumbs, parsley, and lemon rind in a large bowl, and stir to mix well. Stir in the oil. Season to taste with salt and pepper.

Add the scallops to the bread crumb mixture, and toss until well coated. Coat a large nonstick baking sheet with cooking spray, and arrange the scallops in a single layer on the sheet.

Place the baking sheet under the broiler, about 4 inches below the heat source. Broil for 6 to 8 minutes, or until the coating is browned and the scallops are no longer translucent when cut with a knife.

Divide among 4 individual plates, garnishing each serving with lemon wedges.
