My version of chocolate chip cookies
This is just my variation on the toll house cookie recipe - I don't reccomend using splenda here - it totally changes the texture
Ingredients:
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened
3/4 cup diabetisweet white
3/4 cup diabetisweet brown
1 teaspoon vanilla extract
2 large eggs
2 cups sugarfree or unsweetened chocolate chips
1 cup chopped nuts
Directions:
PREHEAT oven to 375° F.
COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
SLICE AND BAKE COOKIE VARIATION:
PREPARE dough as above. Divide in half; wrap in waxed paper. Refrigerate for 1 hour or until firm. Shape each half into 15-inch log; wrap in wax paper. Refrigerate for 30 minutes.* Preheat oven to 375° F. Cut into 1/2-inch-thick slices; place on ungreased baking sheets. Bake for 8 to 10 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Makes about 5 dozen cookies.

I haven't been around the boards too much, but I just saw that you are expecting? Congratulations and best of luck. That will be one very lucky kid.
Question about recipe, what is diabetisweet? where can it be bought? and where can you get unsweetened choco chips? Cookies were never a big deal to me until my niece moved in and she eats them non stop. Of course, she weighs 125 lbs.
Can you let me know as I would like to bake up a batch.

Diabetisweet is an isomalt product, acts JUST like sugar (candy making, etc) you can get it at Target in teh Diabetic section (near the Pharmacy) or online from netrition.com or vitacost.com.
The sugar free chocolate chips (artificially sweetened) I get at Super Walmart and a few of the other ladies have gotten them at different Giant stores. The unsweetened chips (I think that they are 70 or 80% cacao) are made by Ghirardeli and are in the baking aisle at most supermarkets - they are in a stand up type bag. In a pinch you can also use the sugar free hershey's mini bars and chop them up - these you can find in teh candy aisle usually hanging up (beware this is a dangerous section - sugar free reeces peanut butter cups, andes mints, peppermint patties - oh my! lol)
