Karen's Fruit Dip
OK - i'm happy. I needed to bring a dessert for tonight's dinner and was wracking my brain. Found a gorgeous fruit bowl (strawberries, loads of pineapple, grapes, watermelon). Experimented a bit and came up with the following WLS-friendly dip for the fruit, that I know everyone (in my family, at least) will love. I felt so GUILTY licking the spoon (and calculated everything and now i don't!). Haha.
Karen's Fruit Dip
1 - 8-oz. package lowfat cream cheese, softened to room temp
3/4 C. Plain greek yogurt *
1/2 tsp. 100% vanilla extract
2 Tbsp. granulated splenda
Whip all of the ingredients in mixer (using a wire wisk if possible****il creamy and a light texture. Refrigerate.
Yields 1.5 cups (12 - 2 Tbsp. servings). Per serving: 54 cal / 4 g fat / 3 g protein / 0g sugar
* NOTE: I used Oikos greek yogurt for the texture. You could also use regular plain yogurt.
