Karen's Fruit Dip

OK - i'm happy.  I needed to bring a dessert for tonight's dinner and was wracking my brain.  Found a gorgeous fruit bowl (strawberries, loads of pineapple, grapes, watermelon).  Experimented a bit and came up with the following WLS-friendly dip for the fruit, that I know everyone (in my family, at least) will love.  I felt so GUILTY licking the spoon (and calculated everything and now i don't!).  Haha.

Karen's Fruit Dip

1 - 8-oz. package lowfat cream cheese, softened to room temp
3/4 C. Plain greek yogurt *
1/2 tsp. 100% vanilla extract
2 Tbsp. granulated splenda

Whip all of the ingredients in mixer (using a wire wisk if possible****il creamy and a light texture.  Refrigerate.

Yields 1.5 cups (12 - 2 Tbsp. servings).  Per serving:  54 cal / 4 g fat / 3 g protein / 0g  sugar

* NOTE:  I used Oikos greek yogurt for the texture.  You could also use regular plain yogurt.

Enjoy!

Lisa, I just wanted to mention that I really appreciate your tag line.  It brings me up short every time I read it and makes me want to try harder to be a better person.  Thanks for the reminder

It's a reminder to myself too.. Sometimes I forget and looking at that every day brings it to the forefront of my mind.

Thanks for sharing!

I bet you could play around with the extract flavors and make like an orange almond dip or something like that, too!
Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.

oooh  -  orange almond dip sounds really good....  I'll have to try that.

The dip was a big hit - I chopped strawberries and pineapple into really tiny pieces and had that with the dip for my own dessert.  Chewed it REALLY well and it was fine.

Definitely keeping that recipe!
