Pam's Parfait Dessert
OK so this was a challenge to me! lol looks like you can make your own instant pudding with something called "Clear Gel Starch" available online (I think I saw it on amazon) Just sub the cornstarch for this and teh sugar for splenda. It is a canning product so somewhere like the Larder might have it or it might be in the area in the grocery store with the mason jars. I'll have to look!
- 3 ounces Dutch-processed cocoa, approximately 1 cup
- 2 ounces cornstarch, approximately 1/2 cup
- 6 ounces confectioners' sugar
, approximately 1 1/2 cups
- 1 1/2 ounces instant non-fat dry milk, approximately 1/2 cup
- 1 teaspoon salt
Directions
In a large bowl or plastic container with a lid, combine the cocoa, cornstarch, sugar, instant non-fat dry milk, and salt. Store in an airtight container in the refrigerator for up to 1 month

Thanks - that's a wonderful wealth of info! Didn't know there was a Trader joe's in montgomeryville... only knew about the one near Abington Hosp.
As far as aspartame tolerance goes, given that she didn't complete the bypass, I still seem to be digesting things pretty much as pre-surg (closer to a lap band than an RNY). that makes me suspect that aspartame will still be a problem, but it's worth a try on a day when I can afford to be in bed for the rest of the day. :-)
The recipe sounds really cool. I'm not quite sure what the substitution of the cornstarch for the other stuff does.... is there a digestion issue with cornstarch that I should be aware of? If not, then why?
