Pam's Parfait Dessert
OK, I admit it - I'm lazy when it comes to cooking but I loved the pictures of Pam's pretty chocolate strawberry parfaits and needed to make something for work today, so I improvised - still made it WLS friendly since I knew I'd be eating it. So if you don't have all the ingredients needed for Pam's in your house but a few 'staples' here is a modified version...
1 large box of sugar free instant chocolate pudding
1 container of sugar free cool whip
2 containers sliced strawberries
Coconut
Make the pudding according to package directions. When it thickens a little add in the Cool Whip and stir until smooth. Pour half of the mixture into a glass bowl - add a layer of sliced strawberries and top with some coconut. Pour the rest of the pudding mixture over that, then top again with the remaining strawberries and sprinkle a little more coconut over the top.
It came out really pretty and was enjoyed by all in my office and not one person questioned whether or not it was sugar free, etc. Very light and refreshing. Next time I may make the pudding according to the pie instructions so it stays a little firmer, but we scooped this out and it was fine.
Not as good in the protein count as Pam's, but for a really quick and easy dessert that is WLS friendly it worked very well.

I use the Jello sugar free instant pudding and I honestly don't know what they use - if its Splenda or what. The jello brand is delicious and no one can tell the difference between the regular and sugar-free because I make all my pies and desserts with it now for work and for friends, and I usually don't tell them its sugar free until after they've tried it. I'll check on line to see if Jello says what they use, but I'm a big dumper on sugar and I've never had a problem with any of these.

I tried looking it up on line but it didn't indicate what type of sweetener but if you know that's what they use then its better that you don't have it. Maybe some place like a Trader Joe's would have it? Or some of the bariatric food suppliers on line? We'll have to look around and see if we can find some of the splenda stuff for you - this dessert is too good to pass up!
I know it is though but I would try it again. Pre-op aspertame gave me debilitating migraines now I can tolerate it! This surgery changes a lot more then our bellies/intestines. Oh and make sure to follow it with water - that has always helped me too.
Oh and there is a mousse mix that is sold in the pudding aisle that is made with splenda, it is made by Dr Oetker, I have gotten it at Superfresh, Giant, Wegmans, Shoprite and I think Super Walmart, it comes in a black box that is about twice as tall as a pudding box and comes in chocolate, vanilla and strawberry. I am pretty sure you could use it in place of pudding mix, you make it the same way, just add milk (just don't use soy it won't set up - lactaid works OK though)
