Chocolate Cheesecake Mousse Parfaits (with pics!)
Here's the dessert I made for Brian's parents visit tonight for Mothers Day. She also does not eat sugar.


Recipie:
1 large container Ricotta Cheese
1 pack sf/ff cheesecake pudding
1 pack sf/ff chocolate fudge pudding
1/4 cup unsweetened cocoa
3/4 cup ff 1/2 and 1/2
Strawberries cut up
Sprinkling of coconut
In an electric mixer, beat ricotta until smooth
Add in pudding mixes, cocoa, and half and half
Beat until smooth and pudding is dissolved
Layer in glasses with cut up strawberries and coconut
There is at LEAST 8 servings of this, more if you are earlier out.
Here's how I am (loosely) working out the nutritional info... the ricotta is 7gm per 1/4 cup and there is approximately 3.75 cups in the whole container of ricotta which is 15 servings (of 1/4 cup each) 15 servings x 7gm in a serving = 105gm of protein in one container of ricotta cheese.
Divide 105 by 8 (the servings I got for the parfaits themselves) = 13gm of protein
I didn't work out the fat and what not...but I used part skim ricotta so it should be minimal.

Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses. 

I was allowed to put fruit in my protein shakes at full liquids.
As far as real fruit is concerned...I don't think I had some till probably 2-3 mos out. Not because I wasn't allowed to...but because I was concentrating on getting all my protein in from food and didn't have any room.
I do know that I think at my 3 mos appointment my doctor told me I wasn't eating "enough" fruits and veggies (IE hardly any) so I began to feel more confident in eating salads and such
