Last night I wanted to try something new...   so i was browsing eggface's blog, and found a great recipe for shrimp on the grill:

It was AMAZING!

Apricot Ginger glazed shrimp:

Glaze:
5 tbsp apricot s/f jelly
2 tbsp minced garlic
1/2 tsp fresh ground ginger
pinch of "no-salt"
olive oil
and a tbsp of apple cider vinegar.

put all the ingredients in food processor on low, until blended well.

Peel and de-vein shrimp (we cooked up two pounds) and place on grill skewars.  baste the shrimp with the glaze, covering generously.

place shrimp skewars on the grill, and turn after a few minutes on each side, basting over and over until completely cooked.

This was SOOOOOO good.   The outsides of the shrimp carmalized, and was a bit crunchy, and sweet...   wow...   everyone should try it.

We served it with some fresh asparagas.  :)

Success is a journey... not a destination!

We don't have a grill.

But we do have a grill pan.  I bet it would be half decent that way, too!

Thanks!

Mary,

This does look yummy.  Did you use fresh minced garlic or the stuff you can get in the jar?  Also, what is "no salt"?

Thanks,
Vicki

PS- I saw you engagement annoucement in the newspaper on Sunday- it will be here before you know it!

ah....I put shrimp on skewers and marinated them this morning. I wish I had waited or I would have tried these tonight.

Thanks, I will try these in the next week. My kids would love them I am sure.

When life hands you lemons, ask for tequila & salt and give me a call!

Hi there -
I love the recipes that are on that blog.  And Shelly does such a great job with putting the instructions out there that are easy to follow.

In fact, I spent some time reading her back posts and found myself at the very beginning of her blog.

I can't wait to try her protein ice cream recipes later on down the line.

Lisa
