SUCH a great summer recipe!
Last night I wanted to try something new... so i was browsing eggface's blog, and found a great recipe for shrimp on the grill:
It was AMAZING!
Apricot Ginger glazed shrimp:
Glaze:
5 tbsp apricot s/f jelly
2 tbsp minced garlic
1/2 tsp fresh ground ginger
pinch of "no-salt"
olive oil
and a tbsp of apple cider vinegar.
put all the ingredients in food processor on low, until blended well.
Peel and de-vein shrimp (we cooked up two pounds) and place on grill skewars. baste the shrimp with the glaze, covering generously.
place shrimp skewars on the grill, and turn after a few minutes on each side, basting over and over until completely cooked.
This was SOOOOOO good. The outsides of the shrimp carmalized, and was a bit crunchy, and sweet... wow... everyone should try it.
We served it with some fresh asparagas. :)

I love the recipes that are on that blog. And Shelly does such a great job with putting the instructions out there that are easy to follow.
In fact, I spent some time reading her back posts and found myself at the very beginning of her blog.
