Chocolate Mousse (thanks Keri!)

Ok...so yesterday I did some experimenting with the ricotta cheese/pudding thing.  OMG - wonderful wonderful stuff.

I did a little bit of a twist on some of it....

1 large container part skim ricotta
1 1/2 - 2 packages sf/ff instant chocolate pudding
1/2 cup (approximately - remember - I don't measure!) ff half and half

Beat the ricotta cheese with an electric mixer until smooth.  Slowly add in the pudding powder and beat until well blended.  Beat in the 1/2 and 1/2 (I used this just to thin and "lighten" it up - although it tasted just fine without it)

I beat the crap outta that stuff and put it in small containers.  I took a few to work last night (When I am working a few nights in a row, I tend to pack multiples and just keep it in the fridge there)  So...while I was eating it...a co worker said "Oh - that looks soooo good, is it chocolate mousse?"  So I said "Yep....very yummy chocolate mousse, here have some" so I gave her the other container.  She absolutely LOVED it and said "it's not like regular mousse - it's MUCH better".  It was then and only then I clued her into "our" little secret.  She was amazed.

So...that's what I'm calling it....chocolate mousse.  The real test will be when I bring some to Brian later this week.  I'm not gonna tell him.  We shall see.

You know I love you even more now!!! I was getting a bit tired of ricotta with splenda and cinnamon as yummy as that is - going to make a batch of this tonight.... MMM Might have to try it with the cheesecake pudding mix too!!

Missed seeing your face around here the last few days - hope you had a good weekend!

Me too - and we know how much I adore the ricotta/cinnamon mixture.

But - you can share your love with Keri - it was her idea that I just tweaked.  Oh - and my coworker who named it.  Cause I didn't think of it as chocolate mousse until she said that's what it looked like.

I bet you could use skim milk or other dairy product, too.

And I'm glad keri mentioned the cheesecake flavor with the strawberries - cause that was gonna be my next "idea"  or fresh raspberries...omg....I gotta stop thinking about it now.

I missed being around, too - but also had a great time doing the things I needed to do and being at work and what not :)

HI Pam - that sounds yummy.  How many servings did you get out of the combo of ingrediants?

I think that a large container of ricotta is about 2 cups so she probably got 6-8 servings, maybe more if you are earlier out.

Yea - Liz is right - about 8 servings.  I get 5 servings of approximately 3/4 of a cup with just the ricotta/splenda/cinnamon mixture.  It was a few more than that with the combo of ingredients.

Sounds awesome!!!  Only flavor I can't have.  Funny thing.  PRe-op LOVED chocolate, peanut butter and fries.  Now they make me sicker than hell and YUCKY nauseous on top  (I am very happy about it though, good things to not "like" anymore, teehee).  Glad it works for you!!!  Oh, and Liz?  It's FANTASTIC with the cheesecake flavor.  Fresh strawberries and a tiny bit of s/f strawberry topping.
