Help! Looking for a dessert recipe!

Yes! Keep these awesome ideas coming... I am copying and pasting them into a word doc because I love desserts and haven't had any because I'm not this creative.

I went shopping last night...two different grocery stores!
Can not find sugar free chocolate morsels or kisses.  I was so disappointed, as I really wanted to make the truffles.  I'll have to try a bigger store next time!

So, I decided to make Kathy's eclair dessert - with the dark chocolate SF pudding.  Couldn't find it!  So I made it anyway but with SF Chocolate Fudge pudding instead.  I'm sure it will still be good.  I made it in my trifle bowl, so it looks pretty too!

Thanks so much for all the responses!  Please, keep them coming!  I'm adding them all to my collection.  Oh, and I'd love the girl scout cookie thin mint recipe!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
