Help! Looking for a dessert recipe!

Hello Everyone!

My family will be visiting with an old friend for dinner on Saturday.  I've been asked to bring a dessert.  I'd like to bring something other than fruit, that tastes good to non-dieters but won't kill my progress.

Any suggestions?
(No coconut please.)

SF truffles

8 ounces cream cheese (regular, low fat, or ff, but NOT the whipped)
8 ounces SF chocolate chips

Toppings such as:

powdered sf pudding
chopped nuts
pb2 powder

Melt sf chocolate chips
Beat cream cheese till light and fluffy
Beat in melted chocolate
Let mixture sit in fridge for at least 1 hour or until firm

Roll into balls and coat in toppings.  Can also roll in more melted sf chocolate chips. 

There are definately more recipies - I'll try to get them for you when I get home but Liz will have a field day with this post.

Splenda Eclair Dessert (this is AWESOME)

8x8 square pan
1 pkg sugar free vanilla instant pudding mix
1 pkg sugar free dark chocolate instant pudding mix
1 container sugar free or lite cool whip
Lo-sugar graham crackers (they're hard to find but out there)

Mix vanilla pudding according to package directions, then fold in the cool whip. Put one layer of graham crackers on bottom of pan, then spoon 1/2 the vanilla pudding/cool whip mixture over it. Add another layer of the crackers, then the remaining vanilla pudding/cool whip mixture. Add one more layer of crackers.

Mix the chocolate pudding according to the PIE directions (makes it a bit thicker) - spoon that across the top layer of graham crackers.

Refrigerate for at least one hour before serving. I have made this for work and for my friends and unless you tell them its sugar-free they'll never know the difference. And I dump from sugars big time and this recipe has never bothered me - its very light and refreshing. Hope you get to make it - enjoy!!

LOL well now I feel compelled to give a great suggestion....

humm... I have a great lemon cheesecake, regular cheesecakes, chocolate chip cookies, yellow cake, chocolate cake, icing

ALright my brain is fuzz this morning, not feeling so good - let me know if any of those sound good and I'll get out the recipes. I have just about anything you could want - let me know!!

Cheese Cake (Tofu)

1 - 8 oz pkg of low fat cream cheese softened
8 oz of silken tofu
¼ c & 2 tbsp of splenda
2 eggs
1 tsp vanilla
1 tsp lemon juice
½ tsp almond extract (optional)

Pre-heat oven to 350
Beat cream cheese and tofu till smooth
Add eggs, vanilla, lemon juice, continue to beat
Add sugar
Pour into a prepared graham cracker crust (low fat)
Bake for 40 min or until a knife inserted in middle comes out clean
Cool, refrigerate
Serve with low fat whipped topping, fruit, or fruit sauce of your choice.

Happy in Onderland - No, sorry, never lived outside of Southwestern PA. (Except for the 6 months I worked at Winter Park Ski Resort in CO!)  My avatar pix is pretty old - but it's the best pre-surgery picture that I could find.  Thanks for posting!

Kathy - I've never seen SF Dark Chocolate pudding!  I'll have to start searching!  Yum!  Sounds delicious!  Thanks!

Liz - You sound pretty excited about the dessert topic too!  Are all of your suggestions "good for you"?  If you're offering...I'd love to see the chocolate & yellow cake recipes along with the icing recipe.  I can add them to my new collection of healthy goodies!  Thanks for adding to the post!

everything Liz makes it good for you and great tasting.  She experiments with all kinds of recipes and adjusts them to make them safe for us to eat.  Just wait til you see what she comes up with.. YUMMO!!!

The SF truffles are actually from LIz...but it was a recipie I could remember off the top of my head.

I didn't get a chance to look up the other recipies before I left my house yesterday.....but I will get some other recipies for you to add to your arsenol!
