in search of crock pot recipes
Ok, with me returning to work full time next week and not going to get home until after 6pm... I am going to use my new crock pot a lot...
Now, I need some fun and easy recipes for something that can be in the crock pot from 7am till 6ish pm... I have seen a lot where you have to go and stir if half way through... and well that won't work here lol... so post away your faves...
And thanks!

Taco Soup
1 lb. lean ground beef, browned with diced onion
Then add:
1 lg. jar Pace Picante
1 can Rotel (tomatoes/peppers)
1 can diced tomatoes
1 can corn
1 can kidney beans (drained)
1 pinto beans (drained)
1 can black beans (drained)
1 package Taco seasoning
cup or so of water, depending on how soupy you want it
You don't need to add anything else, but I season with dried cilantro and some cumin, salt and pepper.
Simmer for 1 hour or all day in the crockpot.

Mine are simple - because well you know I don't measure!
pork loin or chops with cream of mushroom soup - garlic powder salt and pepper
whole chicken or pieces - lemon and garlic
pork roast - about 1 cup apple juice and some BBQ sauce
meatballs (you can use frozen) with cream of mushroom soup or a packet of sweedish meatball sauce and some water or milk
chicken and BBQ sauce
I'll have to find that website I had posted a while back - there were tons
Oh and you can also do beef stew - beef cubes, carrotts, celery, potatoes, mushrooms, onions, salt, pepper etc

I definitely can not take credit for this, but Eileen did send me this website link and LOVES cooking in her crock pot. I don't even have a crock pot, and surprisingly, Adam doesn't either (he has just about every single kitchen gadget you can imagine, EXCEPT a crock pot!), but I may decide to get one ;) Here's the link: http://www.50plusfriends.com/cookbook/crockpot/index-5b.html

I like to take a large piece of pork (either two small pork loins or a pork butt or something like that...preferably lean) cover with some bar b que sauce (you can use sf) and some broth to thin it out. Some sliced onions...and let it simmer away. It doesn't matter how long, but at least four hours. When you are ready, take it out and shred it with two forks and mix with some of the sauce for pulled pork.
