Well, I tried and they flopped!

I got adventurous this weekend.  I tried making a batch of Pizelle's that would be a little less calories and maybe better for us.  I tried using whole wheat flour instead of white and splenda instead of sugar.  I was willing to give up a little on taste - but OMG - they are awful.  Not only do they taste like cardboard, they are soft and pliable instead of the crispy consistency they should be.  I surely won't do that again.  I think it was the flour and not the splenda.  Has anyone baked with whole wheat flour, and if so, how did yours turn out?

This weekend (for Easter), I am going to try to adapt a chocolate cheesecake recipe with low-fat ingreadients and splenda instead of sugar.  Has anyone tried this and if so, how did it turn out?

I have tried the diabetisweet and didn't care for it, so I'm back to trying splenda.  I measured cup for cup on the sugar/splenda.  Does anyone have any comments on this switch in recipes?  thanks,
Eileen

If you look back at the posts there is a recent post entitled "looking for a recipie" which has a bunch of recipies for cheesecakes.  One of them is mine which I used splenda in.  It's not chocolate but I'm assuming you can mix in some unsweetened cocoa powder or melted unsweetened bakers chocolate and it would be just fine :)

Susan makes all sorts of sf things so definately contact her about the pizelles!

Hi Eileen I sent you an e-mail. but if anyone else needs to know
.
you can no make Pizelles with wheat flour they are horrible. use standard recipe just substitue splenda ( DO NO USE DIABETA SWEET) for sugar and cook alittle longer then normal so they get crispy, if you dont cook them long enough they will stay soft.
Choc SF cheescake fast & easy

1-8oz 1/3 less fat cream cheese
1 tub cool whip
! SF chocolate instant pudding  mix with 1 1/2 cups fat free milk

add all ingredients together place in pie shell & chilkl
takes less then 20 minutes to prepare
for added treat add 1/8 tsp mint extract to mixture

I make my crust with fiber one cereal . place in food processor and crumb it then I place in pie dish and spray with butter spray then pour mixture over it. you can do this with grahan crackers but the cereal has less carbs and more fiber
