Tips Needed for Baking w/Protein
or maybe a few recipes.
I wanted to try making either pancakes or muffins using some protein. Really interested in the muffins because I need to do some commuting for work in the next few weeks and want a quick option to have in the car.
Are there any recipes you can share that include protein?
Any tips?

Tia - I do a lot of baking and well don't like the way that the protein powder makes anything taste! I am fussy! lol not really but with the protein I am. I tend to lean towards muffins that contain ricotta or a fair amount of eggs to get the protein that way - you can also try substituting in the fiber one pancake mix for some of the flour - I haven't tried this yet but I am sure that it will work ok.

No good ideas for baking w/ the protein either. However, I was gonna suggest the egg cups as well. Basically they are individually made little egg "muffins" (you mix eggs, toppings like mushrooms, turkey bacon, lite sausage, veggies, whatever you like), milk and cheese together like you are making a huge batch of scrambled eggs and then pour it into muffin tins (cook the meats and or veggies first, then add the beaten eggs) and bake until set. If I remember correctly, it's something like 10 eggs and toppings makes 12 muffin cups? They really are good, can be eaten in the car, can be microwaved for about 30 seconds to make them warm from the fridge or can be eaten room temp.

String Cheese
Nuts (watch fat content)
Deli Roll ups (take deli turkey ham cheese, whatever *again, watch fats etc*, roll up plain or even in some large lettuce leaves and you have a "rolled sandwhich")
When I'm traveling I tend to pack up a cooler full of stuff for the hotel room (my yogurts and what not) and a smaller personal sized bag with lots of snacks and water bottles/crystal lite etc for the actual ride.
