The Hippy Gourmet Vegetable & Pesto Minestrone
I like getting veggie recipes because you can always corupt them by adding meat mahahaha... but I got this an email and his recipes are always great... and I thought some of you would like this who aren't eating meat on Fridays for lent or a veggies... Vegetable & Pesto MinestroneServes 6-10 Ingredients:
2-3 tbsp Olive Oil
1 large Onion, diced
3 stalks Celery, diced
2 medium Carrots, peeled & diced
½ lb Green Beans, cut into 1″ pieces
1 medium Zucchini, sliced into ¼″ half circles
1 large Waxy Potato, small diced
1 medium Asian Eggplant (or 1 small Italian Eggplant), medium diced
2 cups Canned Cannellini Beans, drained
2 cups Fire Roasted Diced Tomatoes
6 cups Vegetable Stock
1 cup Aborio Rice
½ bunch Parsley Leaves
1 bunch Basil Leaves
2 cloves Garlic, peeled & cut in half
1 tbsp Lemon Zest
½ cup Olive Oil
to taste Salt & Pepper Directions:
- Heat the oil in a large stockpot on medium heat. Add the in the onion, celery & carrot; sauté until nice & soft. Stir in the green beans, zucchini, potato & eggplant; sauté for another 5-6 minutes.
- Stir in the cannellini beans, tomatoes, stock & rice. Bring to a boil, reduce to a simmer & cover for about 25 minutes (stirring occasionally****il the vegetables & rice are nice & tender.
- While the soup is finishing. Place the parsley, basil, garlic & lemon zest in a food processor or blender. Puree until smooth & season with salt & pepper. Serve a spoonful with each portion of soup.

OMG, I was just diagnosed with K.A.D. I'll have to invite Liz or Pam over to do the veggie cutting, sauteeing, simmering, covering, processing, blending, peeling...hmmmm....maybe they can just serve it all up too
. I'm sweating and a little shakey thinking about the whole thing-it says "zest" and "arborio" and "waxy potato" (is that *****graphic??). Vegetable stock??? Do you buy that on Wall Street?? lmao... well here ya go... pesto comes in a tube now... veggie stock in a box... and you can get most veggies already cut up for ya either fresh or frozen... but you have 2 kids and hubby... make them do the work lol...
Or just pay me and liz to do all your cooking for ya we just toss it into the freezer for ya lol...
