Protein based breakfasts

Looking for some fun/interesting ideas for breakfast. I eat egg beaters a lot but would like other ways to "jazz" them up other than scrambled with curry or salsa.

Any good options regarding eggs or other protein ideas?

Chanel - if you check out http://www.theworldaccordingtoeggface.com she has what she calls "bites" that are mini-crustless quiches and are super yummy!! Basically it is 5 eggs and anything else you would like - then you pour them into mini muffin cups and bake! They freeze great and re-heat in the microwave or the toaster oven.

You can also be unconventional and have any protein for breakfast! Who says that you can't have cut up steak bits and cheese? Or chicken salad?

turkey sausage diced up and cooked in the eggs... then add a little cheese to the top...

Hormel bacon bits cooked- then egg beaters on top... give you that bacon and egg feeling...

Left over hamburger tossed in with a sprikle of baon bits... and cheese... now you have bacon cheeseburger eggs...

I do steak and eggs a lot... those thin little cheap steaks and 1 egg...

If I make pancakes I use a complete mix- but add an egg and some ricata cheese to the mix- cook them on low to cook all the way through... and I have all kinds of sugar free pancakes syrups of different flavors to change things up...

There is also some high protein cerals... I don't eat them... but I know there is some on here who do...

But, I don't just eat breakfast food at breakfast... I will have a sandwich etc... left over chicken, etc... so you can change it up that way too...

i am still on pureed, but before surgery i used a recipe frome the south beach diet plan.

basically,  i mixed up about 6 eggs (or egg beaters).  I bought 6 little ramekin baking cups, sprayed each with pam cooking spray.  Poured 1 egg (or egg beaters) into each cup, added whatever i liked  (canadian bacon, cheese, spinach, etc).  Baked them in the oven at 350 until eggs done.

They make nice individual servings and are easy to take to work, just pop in the microwave for about 30 seconds. 

I plan on making these again when i get out of purees

These are all wonderful ideas. I appreciate your help! I can't digest beef/steak at this point, but can substitute chicken, etc in place of beef.

I was at a meeting in orwigsburg a few months ago and one of the girls there makes omeletes really neat....................she mixes up the egg in a zip bag adds whatever she wants to it and puts it in boiling water for l3 minutes.....she said it slides right out and is so easy...I think I should try this myself....but just thought I'd share......                   Lois

To expand on Liz's idea a bit here is a recipe I use and love - plus you can put the quiches in baggies and freeze them then take then out when you want - they nuke great.

8 oz turkey breakfast sausage, removed from casing and crumbled into small pieces
1 tsp extra-virgin olive oil
8 ounces mushrooms, sliced
1/4 c shredded swiss cheese
1 tsp ground pepper
5 eggs
3 egg whites
1 cup 1% milk

Position rack in center of oven, preheat to 325. Coat a non-stick muffin tin with PAM.

Cook sausage until golden brown - set aside in bowl. Sautee mushrooms in olive oil until golden brown, mix with sausage - let cook, then add cheese.

Whisk eggs, egg whites and milk in medium bowl. Divide the egg mixture evenly in the muffn tins. Sprinkle a heaping tbs of sausage mixture into each cup.

Bake until the tops are just beginning to brown, about 25 minutes. Let cool on wire rack for about 5 minutes, then place rack on top of muffins and flip over. Done!!


You can easily modify this recipe to your liking - use cheddar cheese instead of swiss and I don't always use the mushrooms - experiment!

Protein Pancake

1/8 Cup of 2% Cottage Cheese

1/4 Cup Egg Beaters

1/8 Cup Muscle Milk 'n Oats Oatmeal (Any Flavor)

1/2 Tbsp. Smuckers S/F Jam (Any Flavor)

!/2 Tbsp. DiVinci S/F Syrup (I use Vanilla)

1/2 Tbsp. Cary S/F Pancake Syrup

Blend everything with an immersion type blender

Recipe yields 1 pancake and is 13 grams of Protein

If you make a larger batch it will lose its flavor if not used right away

Pour into a heated omelet pan that has been treated with Canola Oil Spray and cook on both sides just as you would a regular pancake.

Some days your the dog and some days your the hydrant.
