Grilled Chicken-Artichoke Salad

Chicken tenders are grilled and tossed with cooked artichoke hearts, romaine, bell pepper, tomato and cucumber slices, with oil and vinegar dressing.

Ingredients

  • 1 lb chicken tenders
  • Salt and pepper
  • Olive oil
  • 1 bag frozen artichokes
  • 1 head romaine lettuce
  • 1 bell pepper (any color)
  • 2 tomatoes
  • 1 cucumber
  • Balsamic vinegar

 

Method

Sprinkle chicken tenders with a little salt and pepper. Heat grill and brush with a little olive oil to prevent sticking. Grill chicken tenders just until done. Meanwhile, saute artichokes in a pan with a little olive oil, salt and pepper until done. Wash lettuce, bell pepper, tomatoes & cucumber. Chop lettuce; slice pepper, tomatoes & cucumber. Toss together in a salad bowl. When chicken and artichokes are ready, add them to the salad mixture. Add olive oil, balsamic vinegar, salt and pepper to taste. Toss to serve.
