What are your favorite Easter & Passover foods?

OK So i am working on the recipes for the  March cooking class and would like to do some traditional Easter & Passover foods. WE always do lamb and ham for easter but that is really the only "traditional" part. Everything else varies year to year. SOOOOOOOOOOOO i am turning to the best resource a girl has! Her OH Friends!!!

speaking of deserts...      strawberry rhubarb cheesecake and lemon blueberry tarts are AWESOME for spring.

Lemon-poppyseed low carb biscuts....

a sausage, spinach, and egg bake for easter "brunch"

also, rutabagas make excellent french fry like side.    you just slice them and coat them with pan spray, salt (or no-salt) and garlic powder, and black pepper.....roast them in the oven...     they're great! 

hmm...  what else.     Deviled eggs!     They're fun!   

Asparagas is also great, very versitile, you can do lots of things with it, from just grilling, to making asparagas soups!

Prior to surgery I always made pineapple stuffing..I am going to mess with it using whole grain bread and splenda if it turns out ok ..I will make it for the class.

we either had ham or turkey... green bean casserole, mashed tators, rolls, and some other misc. crap lol...

my in-laws would have aspargus, sweet potatoes (now my sliced and cooked in a skillet- sent ya the recipe at thankgiving), and a ton of icky desserts...

I know we are going to fry a turkey... and I am going to make my cheesecake and the sweet potatoes... maybe some rolls for those bad carb loves lol...

The only traditional thing we had was deviled eggs made from easter eggs that we colored.  Most times we would have a ham...but sometimes a rib roast or whatever...sorry I couldn't be of much help either!
Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.

Ham pie!  I have no idea how you make it, but I do know that it's the most delicious stuff in the world.  Probably not the lowest in fat, but definitely loaded with protein.....the filling is made of egg, ham, a blend of cheeses, salt and pepper....mmmm.  Definitely need some water after that dish.....but, we have it every year, and i loves it!!

I do the prime rib for Easter and xmas and of course I have a small, small piece, I can't do chicken and am afraid to try turkey.

Well, even though I can't be there in person Liz, I will definitely be there in spirit and will definitely be thinking of you all from Boston.  My ALL-TIME favorite passover foods were always Matzoh Brie with maple syrup, chocolate covered jell rings and chocolate covered marshmallow twists ;)  

Wish I could be there!!!

Hey Lisa, I just got done telling my daughter that Matzoh Brie is one thing I will miss this year.  I am not even going to TRY to get that down this new out.  :(   I  never tried it with maple syrup... hmmm

I like the coconut covered marshmallows, too.. and we always made choc covd matzoh. 

Looks like it's going to be a protein only Passover for me this year.  We'll have to see where I'm at in a month.

Yeah, there will be plenty of time to try Matzoh Brie again...probably better to wait on it this Passover though ;)  What did you used to have it with if not maple syrup?!?!
