Chicken Cheddar Broccoli Soup (Jo Jo's version!)
6 cans of Lite/Fat Free Chicken Broth (College Inn Brand)
2 bags of frozen broccoli
1-2 cups of diced onion (according to your taste)
5 tbsp of butter or butter substitute
1/8 tsp pepper
1 cup of milk
3 cups of shredded cheese
2-3 cups of diced chicken
I boil the broccoli in the broth for a little before adding other ingredients.
My personal options are to fry the onions first because I prefer the taste of a fried onion over boiled.
Also I used 2 cups of cheddar cheese and 1 cup of white sharp cheddar for a little variation in taste.
I used almost 4 cups of chicken this time to make it more protein and a filling meal. But you can add less or none at all.
Makes a big pot! But I am sharing mine with a fairly recent post-op so I wanted plenty.
