A lot of the things on my list include ricotta cheese and yogurt which I assume you don't do.  You do however said you eat cheese....so if you can handle ricotta cheese....pre portion ricotta cheese into 1/2 cup servings (or 3/4 cup servings)  I use the part skim.  A decent sprinkling of cinnamon and 1 packet of splenda per 1/4 cup (this makes it pretty sweet, you can cut back on it if you'd like)  Stir it all up.  I use little individual containers for this.  I'm telling you - it's high protein low fat low carb rice pudding!!!

I also have recently made a new "concoction" if you will that I absolutely adore.  I take a few fuji apples and cut them up, leaving the skin on (unlike liz, the skin doesn't bother me)  Toss in a mixture of cinnamon and splenda...put in a baking dish.  Separately take a few packets of weigh control instant oatmeal (one packet per 1 1/2 ish apples...I cook by eye, sorry)  Cut in a few tablsepoons of butter until the mixture is even in texture resembling very large peas.  Place the apple mixture in either one large baking pan or in individual ramikins.  Squeeze over the juice of a lemon.  Put the oatmeal mixture on top and bake at 400 degrees for about 20-30 minutes, until bubbling and the top is golden brown.  I have also used one or two apples and mixed in a bunch of frozen mixed fruit including strawberries, blueberries, and dark cherries.  Serve warm.  If you make one large batch, it sits in the fridge nicely (gets a little less juicy, however) you can scoop yourself out a serving and nuke in the microwave.  Or if you cook it in the individual ramikins, they would already be ready.

I always always always have cheesesticks on hand (when I am being decent I should say)

I try to keep a jar of PB on hand and will throw a tablespoon or two of it into a very small container and then cut up an apple (on my way out the door) and have apple and peanut butter as a snack.

Hi Lo is a cereal liz recently turned me on to.  I like the vanilla almond one and will take little baggies out and pre portion it to snack on - dry or wet it doesn't matter to me.

What were some of the ideas you got on the preggo board?

Most of the ideas are about the same from the other board.

Today I got some buffalo chicken breast lunch meat at the store. I had them slice it a little thicker than regular lunch meat. I rolled a piece of meat with a slice of provolone. I did the whole pound of it and put them in ziplock baggies so I can grab the bag and go.

I just took mini fritattas (sp?) out of the oven. I mixed eggs, garlic powder, and a spinich seasoning mix (from tastefully simple) then I poured them in my mini muffin pan, topped with provolone and baked. Once they cool I will divide them up into containers for work this week also.

I am trying hard to prepare ahead and make some things I really like rather than just what is good for me. I tend to want to junk on foods I shouldn't when I pack things I don't like.

I also just boiled some eggs. I plan on making some tuna salad and saving some of the eggs just to eat plain.

I will divide the tuna into containers also. I got some of the Sandwich thins they have out now so I can put the tuna on that.

those are some things I am doing this week to eat/snack on. I have found with being preggo, I eat less but more often so instead of "snacking" on crap, I am preparing small portion of various things to eat.

Thanks for all the ideas........

Also, I found frozen chicken breasts on sale that are pre-cooked. You just nuke them. I tried one for lunch and it's yummy. So I plan to slice a few of those into strips to snack on also.....

When life hands you lemons, ask for tequila & salt and give me a call!
