Crab Cake-Stuffed Split Lobster

SERVES 8   ACTIVE TIME: 30 min    TOTAL TIME: 30 min 

4   Ultimate Crab Cakes (Seafood Dept), halved
8   (about 8 oz each) West Australian Cold-Water Split Lobsters, thawed
2   Tbsp Wegmans Basting Oil
2   Tbsp Wegmans Unsalted Butter
1   container (16 oz) Wegmans Lobster Bisque (Market Cafe)
2   Tbsp chopped fresh tarragon

Add All Ingredients to List

 


Preheat oven to 450 degrees.

  1. Place lobsters shell-side down on baking sheet. Stuff each lobster cavity (head area) with 1/2 crab cake. (Don't pack too tightly.)
     
  2. Melt basting oil and butter together in small sauce pan. Brush over lobster and stuffing.
     
  3. Bake about 15 min or until internal temp reaches 145 degrees. Check by inserting thermometer into thickest part of meat. Transfer to clean serving platter.
     
  4. Heat bisque per pkg directions; stir in tarragon. Serve alongside lobster in small dipping bowls.

Chef Tip(s):
To make the meat easier to eat, before cooking, just loosen it by inserting your forefinger between the meat and the shell, then pulling the meat a little bit away from the shell.
