Cioppino-Style Stew

 

SERVES 6   ACTIVE TIME: 25 min    TOTAL TIME: 55 min 

2   Tbsp Wegmans Pure Olive Oil
1   pkg (about 1 1/4 lbs) Bulb, fennel, trimmed, cut in thin, match-like strips (about 4 cups )
1   pkg (8 oz) Food You Feel Good About Cleaned & Cut Mirepoix
2   cloves Food You Feel Good About Peeled Garlic, minced
1   bag (50-count) Food You Feel Good About Littleneck Clams, rinsed
12   (26-30 count) Food You Feel Good About Shrimp, peeled and deveined, tails removed, halved crosswise
6   oz Food You Feel Good About Wild Caught Frozen Alaskan Halibut, thawed, cut in large chunks
1   cup dry white wine or clam juice
1   cup Kitchen Basics Seafood Stock or clam juice
2   cups Food You Feel Good About Smooth Marinara Sauce
1/4   tsp red pepper flakes
Salt and pepper to taste
1/4   cup chopped fresh parsley

Add All Ingredients to List

 


  1. Heat oil in large stockpot on MEDIUM. Add fennel; cook 3-4 min, stirring occasionally.
     
  2. Add mirepoix and garlic; cook, stirring, 4-5 min.
     
  3. Add clams, shrimp, halibut, and wine; cover and heat to simmering, 4-5 min. Continue to simmer until clam shells just open, about 10 min.
     
  4. Stir in stock and marinara sauce; cover and return to simmer. Add pepper flakes; season to taste with salt and pepper. Discard any clams that do not open.
     
  5. Serve in large bowls garnished with parsley.
