Fast easy apple crisp (sorry val)
So I bought a few apples the other day and wanted something different...this turned out soooo good I had to share:
**Note, I didn't measure anything....so use your judgement)
1 large Fuji apple
1/4 cup (approximate) splenda granular
2 teaspoons (apprxoimate) ground cinnamon
2 teaspoons sugar free maple syrup
1 packet carb control maple and brown sugar instant oatmeal
2 Tablespoons butter, cold, cut up into small pieces
Slice the apples, removing core. I think I sliced mine into about 12 pieces or so
Combine splenda and cinnamon
Toss apples in the splenda and cinnamon, toss to coat
Place apples into two small individual serving size baking dish (1/2 of the apple in each one)
Put 1 teaspoon sf maple syrup over each of the apples
In a small bowl and using your fingers, "smush" the butter into the packet of oatmeal, making a crumbly mixture
Top each of the baking dishes with half of the oatmeal mixture
Bake at 425 for approximately 20-30 minutes until apples are tender and oatmeal is GB&D (Golden Brown and Delicious saying courtesy of Alton Brown)
OMG...the house smells yummy and it was SO good. And I was an evil little girl and topped mine with a small scoop of sf vanilla ice cream.

Very creative Pam...This one sounds great and it just happens to use my very best favorite flavor of oatmeal. I got really excited at first thinking I might actually be able to try it because I'm able to have oatmeal and I figured maybe the apples would be tender enough after baking them that I would be able to have just a taste of it but then I saw that the oatmeal doesn't get made with water and I just about cried..lol. It's on my list though and I can hardly wait!
Well...you could do it without the topping and have a baked apple dessert. I would cook it just a touch longer as the apples still had some texture to it...so to make sure they are soft enough it would probably work.
I don't know if milk is on your "do not use list" right now...but sf ice cream is soft, too :)
And as soon as you are better we'll have a "Val's list of things she wanted to eat party" and make you a whole buffet.....

But...but...but, the topping is always the best part
I've been doing pretty good with milk. It's very soothing and great minds must think alike because I had the very same thoughts about the ice cream. It makes complete sense right? Ice cream = soft = ok to eat....Wrong! I tried some the other night and all hell broke loose after the very first spoonful. After some research, it turns out that very cold food/drinks can aggravate an ulcer and cause pain. Gee, it's a good thing the doctors & nurses told me this before I was discharged <--can you sense the sarcasm there? Anyways, it's on the list of no-no's now along with just about everything else. I'm starting to get so desperate that I'd settle for a piece of burnt toast...no butter even!
Woo Hoo!! Parrr-tay!! I hope everyone is hungry that day because the list is pretty long now and I'm only 1 week into it..Can you imagine what it will be like 7 weeks from now?? I'm getting scared just thinking about it.

You are correct but you're a nurse and you already knew that... Milk is said to stimulate acid production which can delay healing but again you already knew this..lol. Anyways, given the cir****tances of also having those diverticular herniated pocket thingy's which by the way, we really need to come up with a shorter and catchier name for them, with that adding to the problem of what I can eat and actually hold down, I was given the ok for low fat or skim milk products only, no whole milk at all and only in moderation which I've been making sure to follow.
So whatchya doing? Anything fun? I can't sleep!!
I was suprised to see a reply a this time of night...I'm waiting for an ambulance patient to come into one of my rooms...should be here in bout 10 minutes...otherwise I would tell you to call me if you're still up (I was so bored I actually ventured onto the main board, just to read all the *****ing....).....as I"m not exactly sure how long ago you replied to this....
