Roasted Red Pepper Soup
Thank you Beth M (Bethmal on the boards) for this recipie. I changed it a bit, but it is soooooo good. Thought I would share. The soup gets pureed so you don't have to be to worried about the size that you are chopping things
Ingredients
10-12 Medium red peppers, stems removed, halved and seeded
3 TBSP olive Oil, divided
1 medium onion, chopped
1 large carrot peeled and diced
3 large garlic cloves peeled and chopped
1 medium sweet potato peeled and chopped
1 tsp dried thyme (or 2 tsp fresh)
1 tsp dried oregano (or 2 tsp fresh)
1/2 tsp dry bay leaves
1/8 tsp cayenne pepper
4-6 cups chicken stock
Chopped basil
Salt/pepper to taste
Place the peppers cut side down on a baking shet. Sprinkle with about 1/2 of the olive oil and sprinkle with salt and pepper. Roast in the oven under the broiler until skins are blackened (about 20 minutes or so....they will look nasty!) Remove from broiler and place in a large bowl, wrap tightly with plastic wrap. Allow to cool.
When cool enough to handle, take off blackened skins and course chop
In a stock pot heat the rest of the olive oil over medium heat. Add the onion, carrots, and sweet potato until onion is translecent. Add the garlic and herbs and sautee briefly.
Add 4 cups of stock and roasted red peppers over medium heat and simmer (uncovered****il all vegetables are fork tender.
In small batches, put mixture into a food processor and process until smooth. Add stoc****il desired consistency.
Add chopped basil, and season with salt and pepper to taste.
It is yummy yummy! I think serving this with a dollop of greek yogurt or sour cream would be lovely as well

This actually sounds really good and it's going straight to the top of my "Things I'd Really Like To Eat But Can't Eat Right Now So I'm Making A List Of Everything I'm Going To Eat Once I Actually Can Eat" list and after Mary's thread yesterday, my list is now 4 pages long..LOL

I'm just a big goof and I like to joke. It's all just for fun....You got yourself a deal though, you bring the soup and I'll bring desert!
I've actually been handling the no food thing pretty well, alot better than I thought I would but that's probably because I've had first hand experience with what the consequences would be if I test the waters. Call me crazy but I just don't equate pain with a good meal, ya know?
That's a good idea with the thread titles but I'm not as trustworthy as Norm and I would look anyways...lol..I really have been keeping a list of recipes though so keep em' coming! We're going to have quite the feast when this is all over with!

Soup and strawberries followed by brownies! Now THAT'S a meal!
I really want to try and make it to Liz's this month. I feel soo out of the loop because I missed the last 2 classes ya know? Plus I miss everyone so much! If for some reason I don't make it though, you let me know when you want to get together and we'll make plans.
John's a little worried, well not worried really but more that he feels bad for me about going because of the food situation right now which I can understand but I told him if I do go then I'll make sure I bring plenty of safe foods with me. Plus, anyone who would be there I know for a fact would never let me chance eating something that might hurt me so I have nothing to worry about with that. I know I joke around about it but it honestly doesn't bother me that I can't eat very much because at least I'm able to eat something so I think I would be fine with being there.
