Bison
I have plenty of bison recipes. They all begin first you shoot a bison. (All my chicken recipes begin with first you steal a chicken) Actually bison meat, (North American Bison or as we know it North American Buffalo), is very close to beef and can be used in any recipe you make with beef. It is leaner than beef so do not over cook it and slow cooking it like stewed meats or in a crock pot works out well. Bison hamburger are usually cut with beef suet (fat) to make it more like beef hamburger. Bison steaks should be marinated for 6 to 24 hrs in a refrigerator before grilling. Try an 50/50 mix of papaya juice and pineapple juice for 24 hrs for a sweet marinade that softens the meat.

Well I don't have any actual recipies - but have had bison burgers and stuff like that - I figured you just used it as you do ground beef. If it is dry, like nic says it might be if it is over cooked...perhaps cutting it with some 90% lean beef would work out well.

Ground bison is about 96%. About the same as some ground sirloin and if you compare 95% ground sirloin of beef to it they come out about the same in all categories. The steaks are also lean and not as nicely marbled as USDA Choice+ and not even remotely like Choice+ cuts of beef.
Like any mammal don`t over cook it.
(there is no gamey taste and if you don`t tell anybody they won`t know it`s not beef)
