As close to a thin mint as we're going to get!

I love girl scout cookies....


I haven't been able to eat them, obviously since surgery...   WELL.....   

1 container of fat free ricotta cheese
2 boxes s/f ff chocolate pudding
2 c. cold skim milk
1/4 teaspoon peppermint extract

Mix the pudding, milk, and peppermint extract together in a bowl until smooth...   then blend in ricotta.

Chill for 30 min or so...  and I SWEAR TO GOD PEOPLE it tastes like a thin mint cookie :)  Norm and I eat this almost every night for a snack.

wow Mary I am so going to print this one and try it. Sounds good.  Murry's sugar free cookies has choc mint but I am staying away. Your idea sounds great I will have to try it. Thanks so much.

Can I just tell you what great timing this is? LOL.

I just ordered Girl Scout cookies from a lady at work. I bought a box of the SF Chocolate Chip. they aren't too bad, but not great. But ever since I was a Girl Scout myself, I have LOVED thin mints. I didn't even order a box, although I was so tempted to put a check mark in that column! And I was thinking how much I miss them. I am definately going to make this. I am so freaking excited! THANKS!!!!

Yes, they do.  I had them last year and ordered a box this year for myself...like whoever said - they were "good" but not fantastic.  And the thin mints (and the chocolate covered peanut butter ones) beat them hands down - except for the evil sugar demons in them.

I think last year they had a sf "brownie" as well - which was a joke.  I can't remember if they were sf or ff for the brownies...but it didn't matter - either way they were hard squares of dry chocolate cookie like substance.  blech.
