Oatmeal Custard! FINALLY!!!

ALright - so I think that I have perfected this now, I forget where I saw the original recipe but here is my version!

1 heaping cup old fashioned oatmeal (not the quick cooking)
1/4 splenda
2 Tablespoons sugar free maple syrup
1 1/3 cups milk ( I use plain soy)
2 eggs
1 teaspoon vanilla
1 teaspoon maple extract
pinch of salt

Mix all together, put in a glass baking dish (I spray it with Pam first) bake at 350 degrees for approximately 30-35 minutes ****il it is just barely set in the middle) I think that the original said it was six servings

I am 2 years out and this makes 3 breakfasts for me

I guess you could omit the maple extract and put in dried fruit to make it the flavor that you like

thanks Liz!! It does sound Yummy.. I can't try it until after the surgery since  I am now on the South Beach plan and cannot have oatmeal or milk.  BUT, I will  definitely try this when  I am ready to eat.

YAY!!  Thanks Liz!  I've been waiting for you to post this!  I've been make a version of Grape Nut Pudding (in which I substitute Kashi Go Lean Crunch Cereal for the Grape Nuts cereal) and I just love it for breakfast.  When I saw you had a recipe for Oatmeal Custard I was so excited!  I can't wait to try it!  Thanks!

Sorry I am domestically challenged, what is maple extract??  How much protein does this provide per serving?  Thanks so much!

Extracts are found in the baking isle....like vanilla extract commonly used in baking.  They have all sorts of flavors...lemon...cherry...coconut....almond...mint....they are little tiny bottles and are very potent (the vanilla extracts come in a larger bottle most times)

I did not figure out the nutritional info, and I guess it would probably depend on what a "serving size" is for you, anyway.  I'm killing time online now anyway - so if Liz doesn't have the info off hand, perhaps I'll fool around with that....

Thanks Pam! I can eat about 1/3 of this for breakfast, I think that the original recipe said it feeds 6 - maybe recent post-ops but well it is only 1 cup of oatmeal so I divide it in thirds - reheats great in the microwave.

You can find out the nutritional info if you plug everything that you use into fitday.com it'll tell you, I know it will be different based on the kind of milk, size of eggs, serving size - etc.
